Back at School

Well after a surprisingly short red eye(flight-only 4 1/2 hours from Seattle to Boston, kinda quick) and a normal length drive from Boston to Poughkeepsie I am back in my dorm.

Yesterday we had a prep day in class, the restaurant wasn't open today and we had to get all the shtuff ready for service on tuesday.

For those of you who have no idea what I'm talking about, my class right now is working in one of the restaurants on campus, it's my last cooking class here and I'm going to go ahead and say it's an intense, if not hectic class.

I am on the Hot Appetizers station, it's very busy and when we got into class yesterday Chef told us that he had chosen to switch the stations around so I lost my partner. oh joy!

  1. These dishes look good. It has been so long since I was in culinary school I forgot how important the person you were partnered with was. A bad one could sink your day ;-(

  2. thankfully the person they hired to help me plate during service is really good, sometimes the person you work with on the line is just constantly on the same page as you and it works out really nicely. other times it's a train wreck! that's the worst/most hectic feeling
