We made pull apart bread! Yah, I've seen a lot of pull apart recipes floating around the internet so when my cousin, Lily over at NYU requested we send her baked goods I decided it was high time I try out the cinnamon pull-apart bread, and I mean once we were making the sweet version I deemed it an equally appropriate time for a savory pull apart bread too...
And so the story goes,
First the sweet...
Cinnamon Sugar Style
For the Dough
2 3/4 cups plus 2 tbl all-purpose flour
1/4 cup granulated sugar2 1/4 tsp (1 envelope) active dry yeast
1/2 tsp salt
2 ounces unsalted butter
1/3 cup whole milk
1/4 cup water
2 large eggs, at room temperature
1 tsp pure vanilla extract
For the Filling
1 cup granulated sugar
2 tsp ground cinnamon
1/2 tsp fresh ground nutmeg
2 ounces unsalted butter, melted until browned
Mix 2 cups of the flour with sugar, yeast & salt in large bowl
In a separate and probably smaller bowl, whisk the eggs
Let the mix chill for a minute so it's not piping hot
Add the liquid to the dry ingredients and mix a.) with a spatula or b.) in a mixer with a hook attachment
Add the eggs into the mixture and mix until they are one with the dough then add in the remaining 3/4 cup of flour
Now, you must let the dough rise. Place it in a greased bowl and cover it with plastic wrap and a towel and let it hang out in a warm spot. how about on the back of the stove? perfecto
Be patient and let it rest for an hour, then punch that sucker down. Meanwhile mix together the cinnamon, sugar & nutmeg and take your loaf pan and grease, then flour it. good job.
Okay so just be a little more patient and let the dough sit on the counter atop some flour for just 5 more minutes. While you wait, you should probably melt some butter for brushing on the layers.
At this point the dough has to be rolled out on a floured surface. It should be a large rectangle-the directions say 12 inches tall and 20 inches long...so, I guess you should shoot for that. But just think rectangle. repeat it in your head if you must. Brush the butter all over the dough & sprinkle with the cinnamon mixture.
Now slice the dough vertically into 6 strips and carefully stack the strips on top of one another like such
Slice those strips into 6 squares and layer them into the loaf pan a little something like this
I know you're so over letting this damn dough rest, but just cover it with a kitchen towel, put it back in that warm place and let it sit for about 45 minutes....you can clean up that sugary mess while you wait and you can preheat the oven to 350.
Finally...it's time. Put the pan on the middle rack in the oven and let 'er bake for 30-35 minutes until it is deeply golden brown. Remove, let it cool and rest then pop it out.
Try a piece AS SOON AS POSSIBLE....you've waited long enough!
Maybe after a hearty dinner or with a nice cold glass of milk?

thanks! I'm not a barista, though I once was. that picture was from class, at culinary school we had a class where we were servers in the fine dining restaurant so espresso was part of the job/the perks
