Moving on...let's talk Apple Cake! My cousin had conveniently just gone apple picking last weekend but I'm not a fan of ooey-gooey slimy, applesaucey cooked apples (re: apple pie) so I opted for a traditional Apple Cake
Both my grandma and grandpa were coming in for dinner and for some reason I felt like apple cake would be a hit with the older crowd...is there research that supports this? It just felt like a fact.

6 apples, Mom uses McIntosh apples
1 tablespoon cinnamon
5 tablespoons sugar

2 3/4 cups flour, sifted (oops we forgot to do that)
1 tablespoon baking powder
1 teaspoon salt
1 cup vegetable oil
2 cups sugar
1/4 cup orange juice
2 1/2 teaspoons vanilla
4 eggs
(you can add walnuts too)
How To
Preheat oven to 350 degrees. please, thanks.
Grease up a tube pan (the kind with the pop out bottom)
Chop the apples into medium-large chunks and toss them in the cinnamon & sugar. Let them hang out.
At this point I was chopping apples and my Grandma was measuring ingredients. She was wonderful to work with, thanks Grams!
In another bowl mix the flour, salt & baking soda. And in yet another bowl whisk the oil, orange juice, sugar & vanilla.
Now go ahead and mix the wet into the dry & add the eggs one by one. Mix it all up so it's homogenous (hey big word, waddup!)
At long last you can pour half of the batter into the pan, spread half the apples over it and top off with the other half of the batter.
Finish that puppy off with the rest of the apple and toss it in the oven for an hour and a half or until a toothpick/cake tester comes out clean. That's it. You're Done!
